Oatmeal Cookies!!!

Hello Friends!!!!

I was looking for a snack at evening as I am thinking what to do for snack in the evening!!! I saw big pack of oats and would like to try..Already tried  American version of oatmeal raisin cookies and it was chewy inside..I would like to do differently and visited my friend's blog and found it so yum and it will b crunchy inside and outside too if you allow to bake little bit longer..It is very healthy one along with nut.It is great for kids for a snack box.

Ingredients:


  • 135 g unsalted butter (room temperature)
  • 80g caster sugar
  • 80g brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 190 g All purpose flour
  • 1/2 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 2/3 cup or 60 g of rolled oats
  • A handful of sliced almonds for decorating on the top of the unbaked cookie.

Method:

  1. Preheat the oven to 350 F or 180 C. Line the baking sheet with parchment paper or silicone mat.Keep aside.
  2. Sift the flour along with baking soda,ground cinnamon,salt in a bowl.Keep aside.
  3. In an electric stand mixer or hand mixer with paddle attachment,beat the butter along with 2 types of sugar and mix well until it is well creamy and smooth in texture
  4. Add egg and mix well.
  5. Add vanilla extract to it and mix well.
  6. Add the flour mixture to it in 3 additions.Mix well until it is well incorporated.
  7. Add the rolled oats to it and mix well.
  8. Make into balls from 1 Tblspoon of the dough for each and every cookie ball,flatten it and press gently and place 2-3 almond slices on the top of each and every cookie. so all will be having the same size of the cookie.
  9. Bake it for about 12 minutes or until the edges starts browning.
  10. Allow it to cool on the cooling rack.
  11. Serve it along with a glass of milk or a cup of tea/coffee or as a snack time for best taste and crunchiness

Dark Chocolate Scouffle!!!

Hello Friends!!

Here We are so fan of hearty chocolates... I want to surprise my family as I made it at late afternoon...I served it after dinner.. IT was so good..Its the most gluten free recipe and it is very soft and lovely and can garnish it with whipped cream or chocolate sauce or fruits!!!

Ingredients:

  • 50 G/ 1/4 cup Chopped dark chocolate
  • 2 Tsp corn flour
  • 1 Tsp cocoa powder
  • 1 Tsp Instant coffee powder
  • 4 Tsp caster sugar(divided)
  • 150 ml skimmed milk
  • 2 Medium eggs(separated)
Method:

  • Preheat the oven to 350 F or 180 C....Place the ramekins on the baking sheet and keep aside.
  • In a medium saucepan on medium heat,put the chopped chocolates with all powders and 2 Tsp of sugar and add milk...bring it to boil...Whisk gradually till it gets thickened.
  • On low flame,whisk the egg yolks only and stir well until no lumps are found.
  • In a separate bowl with whisk attachment of hand mixer ,beat the egg whites until it is frothy and add 2 Tsp of sugar to it and beat well until it is well foamy and stiff peak form.
  • Fold the egg whites into the chocolate mixture by using spatula...one by one at a time. Mix well until it is well incorporated.
  • Pour into the ramekins and allow it to bake
  • Bake it for about 12 minutes.
  • Serve warm or cold along with whipped cream or chocolate sauce or a dash of a fruit ( I served it with chocolate sauce)

Egg Puff

Ingredients:


  • Readymade Puff pastry single sheet.
  • 1 or 2 whole eggs( boiled and peeled off the shell)
  • 1 Onion finely chopped
  • 1 Tomato finely chopped (optional)
  • 1 Tsp oil
  • 1/4 Tsp Pepper
  • 1/4 Tsp turmeric powder
  • 1/4 tsp chilli powder(optional)
  • salt to taste.
Method:

  • Place the puff pastry on the countertop and let it remain at room temperature.
  • Cut into squares.
  • In a medium pan on medium heat, add oil, onion and let it cook till it gets transparent and add tomato cook well till it gets cooked.
  • Add all powders and cook well..
  • add salt to taste.
  • garnish it with coriander leaves if you want.
Assemble:

  1. Line the baking sheet with parchment paper.Preheat the oven to 250 F or 180 C.
  2. Place the cut squares on the baking sheet.
  3. Take 1 Tbsp of the filling and place  the whole egg or cut half of the egg and place towards the filling.
  4. At the ends of the square, bring it to meet diagonally
  5. Brush it with egg wash
  6. Allow it to bake for about 10 to 15 mins or the top and edges are brown in color.
  7. Serve hot with tomato ketchup

Baked Samosa

Here the weekend came as I made it for my friends as we used to make something different on every fridays!!! I tried as Baking version of samosas.It tasted so good and it is healthy one than deep fried version.They are so happy and had it

Ingredients:

For Potato Masala Stuffings:

  • 3 Medium potatoes Boiled,peeled off the skin and mashed.
  • 1 Large red onion finely chopped
  • 5 to 6 green chillies  finely chopped.
  • 1/4 Tsp Jeera
  • 1/2 Tsp mustard seeds
  • A spring of curry leaves finely chopped
  • 2 Tsp ginger garlic paste.
  • 1/4 Tsp garam masala
  • 1/4 tsp chilli powder
Method:

  • In a wide pan,add the oil on medium flame, add the mustard seeds and let it splutter,add jeera,curry leaves and cook for few seconds and add ginger garlic paste.
  • Let it cook for few minutes till the raw smell goes. Add onions and let it fry till it turn light brown in color
  • Add green chillies, chilli powder,garam masala and add mashed potatoes.
  • mix well and cook it for about few minutes till the potato is well coated with spices.
  • garnish it with coriander leaves.
  • Keep aside and allow it to warm

For Samosa dough 


  • 1 Cup All purpose flour
  • 1/3 Tsp baking powder
  • 2 Tsp Ajwain seeds
  • 1/2 Cup water
  • 3 Tbsp  Oil
  • Salt to taste
Method:


  • Mix all the ingredients as given as above for samosa dough except water. Mix well until it is well combined. add water little by little to for m a firm dough. Keep aside for 30 minutes and cover it with wet kitchen towel
Assembly:

  1. Divide the dough in to 4 balls.Each ball roll it and make into a circle.Once it is formed as circle,take a knife and cut in to halves (semi circle)
  2. Place the semi circle on your fingers hand. place the water at the ends with the help of a finger.
  3. Make it into a cone (triangle shaped) and pinch towards the end of the top triangle.
  4. Place 1 Tbsp of the filling into it and press it gently.
  5. Place the water towards the end of the dough side to seal it 
  6. Make into samosa shape.
  7. Place the samosa shaped sitting on the baking sheet.
  8. Brush it with oil or butter(melted)
  9. Preheat the oven to 350 F or 180 C..
  10. Repeat the same till the dough gets over.
  11. Allow it to bake for about 12 to 15 mins or until the edges on the sides and top and bottom gets light brown in color.
  12. Allow to serve warm or hot and dip it with your favorite tomato ketchup or tamarind chutney.

Buttermilk Tutty Fruitty Cake

One day I was visiting my friend's place as my friend's mom in law was talking to me about Fruit cake and it was very tempting as they are Christians...I can't wait to bake on Christmas time...I missed to have a piece of cake they gave to my hubby at his office long back. I missed it as he ate it :) I was having tutti fruity box container..Why I can't try to make it?I had made it as an egg version last year..This time i want to try egg-less version and here it is.It is so tasty and lovely . I changed type of pan from round pan to loaf pan.You can use a round pan. Thank you Priya :)



Here goes the recipe:


Ingredients:


  • 1 1/2 Cups All purpose flour
  • 2/3 cup Sugar
  • 1/4 Tsp salt
  • 1 Tsp freshly grated nutmeg or ground nutmeg powder
  • 1 Tsp ground cinnamon powder
  • 1 Tsp Baking soda
  • 1 cup Buttermilk
  • 1/2 Cup unsalted butter (melted)
  • 1/2 Tsp vanilla extract
  • 1/2 Tsp Rum extract(optional)
  • 1/4 cup chopped dates(optional)
  • 1/2 cup raisins/tutti fruity
Method:

  • Preheat the oven to 350 F or 180 C.Line the round 8 inch  pan or  loaf pan with parchment paper or grease it with oil and dust it with flour
  • Sift the flour,baking soda,ground nutmeg,ground cinnamon,salt into a bowl.
  • In an another bowl, add the wet ingredients such as buttermilk,butter,vanilla extract ,rum extract and mix well by whisking it.
  • Add the dry mixture to the wet mixture in 2 additions at a time.
  • Add the dates and tutti fruity to it and fold well 
  • Transfer it to the greased loaf/round pan and allow it to bake for about 20 to 30 minutes or until the tooth pick comes out clean
  • Allow it to cool on the cooling rack
  • Place the loaf cake on the cutting board and slice it ..
  • Best to serve it along with a cup of tea

Oats Nut Bar

Hello Friends!!!

Oat is the best to have and It has  many recipes from breakfast to desserts... It is very healthy one and can replace anything with oats and oats flour for desserts..I have got energy blend box and it was lying it down and thinking what to do and make my family to eat..It is super healthy and crunchy one...My hubby loved it and said It will be like granola bars!!!! He used to take it to office if he has no time to eat at breakfast..I am feeling good to have oats nut bar as it is healthy and has fiber in it.....Go for it and give energy!!!! Thank you lots priya :)



Recipe Source : Oats Nut Bar

Ingredients:


  • 1 can Condensed milk
  • 250 Gms I used (3/4 cup Rolled Oats)
  • 1/4 cup shredded coconut.
  • 1/2 cup dried cranberries or if you have energy blend which has dried cranberriespumpkin seeds,sunflower seeds and almonds in a box) you can use.
  • 1/4 cup of mixed seeds such as pumpkin or sunflower.
  • A handful of chopped walnuts.


Method:


  • Preheat the oven to 160 C or 325 F.Line the square or rectangle pan with parchment paper.
  • Pour the condensed milk into the medium sauce pan and allow it to warm on medium flame.Switch off the flame.Once warmed and keep aside.
  • Mix all the seeds,coconut rolled oats,dried cranberries/ energy blend (1 cup) and walnuts to it.
  • Take a wide bowl pour the condensed milk  and add all the mixtures and mix well using rubber spatula or wooden spoon.
  • Transfer into the lined baking pan wither square or rectangle...spread evenly by using fork or rubber spatula
  • Bake it for about 1 hour or until the edges starts light browning....
  • Allow it to cool on the cooling rack..
  • Once warmed cut into squares and Oats nut bar is ready to serve

Vanilla Sponge Cake (Eggless)

Hello Friends!

I have chosen Vanilla Sponge cake as it has no eggs and replaced it with yogurt as It goes great for vegetarian friends who does not want to use cake with eggs. My friend wants mini yogurt based simple cake with little bit cream on the top for their taste approval... I have decided why not use cut out cakes with the help of cookie cutter circle size. I want to give idea and impress my friend...I made round shaped 8 inch cake and cut into round shaped mini cake with the help of round cookie cutter....Is n't it nice idea? My friend had enjoyed it with a big bite on it  and cannot wait to bake cake for their next order on birthday!!!Hoping to get through!!!!!

Recipe source: Vanilla Sponge Cake (Yogurt based)

Ingredients:

  •  1 1/2 cup All purpose Flour
  • 3/4 Cup Sugar
  • 1 cup plain yogurt (Room temperature)
  • 1/2 Tsp baking soda
  • 1 1/4 Tsp baking powder
  • 1/2 Cup Vegetable oil
  • 1 1/2 Tsp Vanilla Extract
  • 1 Tbsp  Milk( For brushing on the top of the cake)
Method:
  • Preheat the oven to 350 F or 180 C. Grease the 8 inch cake pan with oil and dust it with flour.Keep aside
  • In another bowl,sift the flour twice and keep aside.
  • In a wide bowl,add the yogurt, sugar to it and mix well by using whisk until the sugar gets dissolved.Add the baking powder and baking soda to it and whisk well and set aside for about 5 minutes.You will see bubbles..
  • Add oil and vanilla extract and mix well until it is well incorporated.
  • Add the flour in 3 additions.Gently fold the mixture and make sure it is all well combined.
  • Pour the batter into the greased cake pan.Tap it firmly to get rid of the air bubbles.
  • Bake it for about 30 to 35 minutes or until the tooth pick comes out clean.
  • Once it comes out of the oven,brush the milk on the top of the cake.
  • Allow it to cool on the cooling rack.
  • Once the cake is cooled down it can frost it with any buttercream and filling of any flavors!
For Making Vanilla Buttercream:

Ingredients:
  • 1/2 cup unsalted butter
  • 2 Cups Icing sugar
  • 1/2 Tsp vanilla extract
  • 1 to 2 Tbsp Milk or cream to loosen the mixture.
Method:

  • In a wide bowl using hand mixer ,add the butter and powdered sugar to it and beat it on low speed and make sure it is well combined.
  • Add vanilla extract and beat it well on medium speed and scrape down the sides by using spatula..
  • It will be so creamy and stiff.Add milk/cream to it and it will loosen.
  • You can add any color food to the icing mixture bowl.  I added pink color.
Garnish:
Pearl sprinkles.


 My own cake to assemble!!!

  • Take out the cake,level it if you want and place it on the cutting board,Place the cookie cutter and cut into desired shapes and repeat it till you get all cut circle mini cakes.
  • Place each and every mini cake on the serving plate 
  • In a piping bag with star tip 21 wilton tip put the frosting inside the piping bag and decorate it as flower and place the pearl sprinkle on the top of the flower and it looks so simple.
  • If you want to add cream on all sides and top you can frost the white or any color buttercream..

Fruit & Nut Eggless Cookies

Hello friends!!!!

I have made  the fruit and nut cookies as it is on egg version and everyone loved it... I baked it on before Christmas times... I loved it..This time I had tried  an egg-less version so my friends who are not able to eat egg based cookies/cakes.. and my friends loved the taste and want more..as I made small batch cookies. I am so happy to hear it from my friends... My family loved it... It is best to have it along with a cup of milk or tea or as a snack!!! 



Here goes the egg-less version of the cookies as below


Ingredients:


  • 1 Cup All purpose Flour
  • 1/2 Cup Powdered sugar
  • 6 Tbsp Unsalted butter
  • 3 Tbsp Glazed cherries and green ones i added it too if you want..
  • 3 Tbsp chopped unsalted pistachios.
  • 1 to 2 Tsp Milk
Method;

  • Preheat the oven to 350 F or 180 C.
  • Sift the flour in a bowl.
  • In a wide bowl,add the butter,powdered sugar and mix well until it is well creamy by using your hand whisk or hand mixer.
  • Add the flour at a time.
  • Add the glazed cherries and pistachios.
  • Mix well to form a dough... Add milk if it is dry and still crumbly.
  • Place the dough on the counter top and make into log shaped by rolling it
  • Transfer the log shaped dough into the parchment paper and roll it until it is covered and seal on both sides.
  • Keep in the freezer or fridge until it is firm.
  • Place the long shaped dough on the cutting board .Take a sharp knife and cut into 1 inch thickness
  • Place the cut cookie dough on the baking sheet lined with parchment paper.
  • Bake it for about 10 to 12 mins or until the edges of the cookies are light brown in color.
  • Allow it to cool on the cooling rack.
  • Serve it along with a glass of milk or a cup of tea.... 
  • Store it an air- tight container.

Australian Lamingtons.

Hello Friends!!!

 I have been wanting this for long time...I didn't get time to bake it  as It is already in my list what to bake next!!! Always being as a baker I always try new different cakes and found out it is very chocolatey and coated with desiccated coconut. It is super challenging and It came out in my 1st attempt. It is originated from Australia...It is super sponge cake filled with chocolate frosting and coated with coconut flakes. It is so heavenly and it is super wet and it can never be dry inside.It tasted really like bounty chocolate  :)

It is the best mini cake and it is small sized bite ones. Here goes the recipe and try for it Thank you Priya!!

Ingredients:

For Sponge Cake

  • 1 1/2 Cup All purpose flour
  • 1 1/2 Tsp Baking Powder
  • 1/4 Tsp salt
  • 2 Eggs
  • 1/2 Cup unsalted butter
  • 3/4 Cup Sugar
  • 1/2 Cup Milk
  • 2 Tsp Vanilla Extract
For Chocolate Frosting
  • 1 1/2 Cup Icing sugar
  • 3 Tsp Unsweetened Cocoa powder
  • 2 tsp unsalted butter
  • 1/3 Cup Milk
Coating:
  • 1 Cup Dessicated Coconut flakes
Method:

  • Preheat the oven to 350 F or 180 C. Grease 8 inch square pan with butter and dust it with flour or line it with parchment paper.
  • Sift the flour,baking powder,salt thrice in a bowl and make sure it is well combined.
  • In a wide bowl You can use it to beat by using whisk or hand mixer with paddle attachment, add the butter and sugar together and beat it until it is well creamy and smooth.
  • Add eggs one by one at a time.beat it well 
  • Add vanilla extract to it.
  • Add the dry mixture in three additions and also add milk at a time in the same 3 additions.
  • Mix well until it is well incorporated.
  • Pour the batter into the greased square pan.
  • Bake it for about 25 to 30 minutes or until the tooth pick comes out clean.
  • Allow it to cool on the cooling rack.
  • Once cooled down, flip the cake upside down and cut into squares(4*4) and place them  in the fridge until it is firm.
For making the frosting:
  • In a medium saucepan, Add the butter to it and add milk and allow it to boil until the butter is melted before reaching the boiling point.Switch off the flame.
  • In a bowl,add the icing sugar,cocoa powder and mix well.
  • Add the wet mixture to the bowl and mix well by using whisk until it is smooth and creamy
Assembly:
  • Take out the cake from the fridge.
  • Line the baking sheet with parchment paper....Place the cooling rack on the baking sheet 
  • Dip the one sponge cake into the frosting bowl with the help of your hand or using 2 fork and make sure the top and all sides of the cut squared cake is well dipped and covered it with frosting and place it on the cooling rack.
  • Repeat the same for the remaining squared cakes.
  • Now coat it with dessicated coconut by rolling it on the sides and top too.
  • Keep it back to the fridge until it is firm and set.

Cherry Smoothie

Hello Friends!!!!


One day at morning I was feeling tired and not active...I want to do have something which helps me in getting energized.I saw fruits lying on the dining table and apples was there. I opened up the fridge to check whether any other fruit was inside. I got fruit named Cherries but never tasted for smoothie and saying by myself Why not have a try for Smoothie?.. It is easy to do and time saving before starting to cook for my family. I need to re freshen up!!! It was just a matter of few minutes... It was fun and my daughter and me had cherry smoothie and it was so full... It tasted best and it is so good. You try for it.Thanks a lots Priya!!!

Ingredients:


  • Fresh Cherries 10 to 12 Washed,drained and De seeded.
  • 1/4 Cup Cold milk
  • Sugar depends on sweetness as you added. ( I used honey for myself and added sugar for my daughter )

Method:

  • De-seed the cherries by using your hand, 
  • Put it into the blender and blend into smooth paste
  • Add milk and sugar/honey and blend it once 
  • Transfer it to the serving glass
  • Serve immediately...

Orange Cake

Hello Friends!!!


I just love oranges!!! After California trip there was many and many oranges and I love oranges after mango as It is the most citrus fruit and can make anything from appetizer to desserts. I want to do an orange cake as it is the best to have as it is not needed to apply frosting on it and it is the best moist and feeling orange flavor and goes best along with a cup of tea or coffee or as a snack.Thanks a lots Priya as it is an egg-less & butter-less too



Recipe Source: Orange Cake 

Ingredients:


  • 1 1/2  Cup All purpose flour
  • 1/2 Cup Powdered sugar
  • 1/3 Cup Oil ( I used Vegetable oil)
  • 1 Tsp Vanilla extract( I used orange blossom extract)
  • 2 Large orange to make juice (I got 1/2 cup orange juice)
  • 1 Tbsp Orange zest (Washed  and grated)
  • 1 Tsp Baking powder
  • 1 Tsp Baking soda
  • 1/4 Cup Water
  • Oil for greasing the cake pan

Method:

  • Preheat the oven to 350 F or 180 C Line the cake pan 6 inch with parchment paper if you want or you can grease it with oil and dust it with flour
  • Grate the outer skin of the orange and squeeze orange to get extract juice and discard any seeds.
  • Sift the flour,baking powder,baking soda and salt in a bowl. Keep aside 
  • Whisk the oil,orange extract/vanilla extract ,orange juice ,water and orange zest and mix well.
  • Pour the wet mixture to the dry mixture and mix well until it is well incorporated.
  • Pour the batter into the greased cake pan and allow it to bake for about 25 to 30 mins or until the tooth pick comes out clean.
  • Allow it to cool on the cooling rack 
  • Once cooled you can frost the cake or keep it as it is.
  • I used stencil and placed it on the top of the cake with powdered sugar to get the desired design..Garnish it with orange on the top if you want,

Mini Choco Chip Muffins(Eggless)

Hello Friends!!


Herewith I made mini choco chip muffins as It is one of the most favorite treat by my kid and her friends because it is so mini,chocolate y flavor and melted choco chips once baked it. Everyone loved it and It is one of the most favorite treat in the U.S. and all over the world as It has many varieties such as choco chip cookies,choco chip cookie nut bars,choco chip used for garnish etc.

Recipe Source: Choco Chip Muffins

Ingredients:


  • 1 1/2 Cup All purpose minus 3 Tablespoons.
  • 3 Tbsp of Corn starch
  • 1/4 Cup Sugar
  • 1/4 Semi sweet choco chips ( I used Toll House)
  • 1 Tsp baking powder
  • 1/2 Tsp baking soda
  • 1/3 Tsp salt
  • 1 Cup Milk
  • 1/2 Cup Oil
  • 1 Tbsp Vanilla Extract

Method:

  • Preheat the oven to 350 F or 180 C,Line the mini muffin pan with baking papers
  • Sift the flour, corn starch,sugar,baking powder,baking soda,salt and mix well.
  • Take another bowl,add milk,oil and vanilla extract,Mix well
  • Put the wet ingredients as given into the dry mixture and mix well until it is well incorporated.
  • Add the choco chips and mix well.Reserve it for some to sprinkle on the top of the batter before baking.
  • Pour 1 Tablespoon of batter filled  into each and every muffin cup 
  • Put few choco chips into each and every muffin cup.
  • Bake it for about 15 to 20 minutes or until the tooth pick comes out clean
  • Allow it to cool on the cooling rack
  • Serve it

Mango Lassi

Hello Friends!!!!

It is one of the most favorite fruit as Mango!! I will have mango milk shake that my mom used to make since my childhood days!!! She will make mango shrikhand and goes best combination with poori or chappati..Yum Yum...We had stayed in Ahmedabad,Gujarat and really enjoyed my mom's foods such as mango delights ,Mango shrikhand,Mango Milk shake,Mango Lassi, Sweet Mango Curry(Kerala style) and would slice all mangoes and have it full and used to fight with my bro for the last slice of mango..It is the best moments in my life!!!! Mango is the king of fruit in India!!!! It is the refreshing drink after meal or as an accompaniment for drink!!! It is best to have lassi on Summer days!! I made it yesterday for my hubby and my daughter!! They liked it and almost full..

Ingredients:


  • 3 Mangoes ( Peeled and Chop and made into Puree)
  • 1 1/2 Cup Yogurt 
  • 1 to 2 Tbsp Sugar( I used honey for my hubby only )
  • 1/2 Cup Water

Method:

  1. Put  the chopped mangoes into the blender and puree it 
  2. Add the other ingredients into the same blender and pulse it well 
  3. Transfer into the serving glass and add ice cube if you want.
  4. If you have reserved mango puree and pour a dollop of mango puree on the center of the lassi and do design as u like with the help of a tooth pick to get design.( I made sun design)
  5. Serve it

Ragi Maavu Laddoo

Hello Friends!!

 It was very calm day as my kid was enjoying holidays with us and My kid won't eat ragi along with milk..I was thinking how to make her eat ragi as She likes laddoo but never mention what is the name and what ever she sees in the shape of ball will be laddoo..She loves boondi laddoo, Rava laddoo,but she never tasted ragi..I visited her blog and got it as super easy step by step wise  and excellent writing on her blog  Thanks a lots Priya for this wonderful recipe. My daughter loved it and said it was awesome :) I chosen almond as she will have double strength as she won't eat any dry fruits except almond and raisins... 

Ragi is very good in health and goes best for kids..unlike all the flours Ragi flour is very healthy.



Recipe Source: Ragi Maavu Laddoo

Ingredients:


  • 1/2 Cup Ragi flour
  • 1/2 Cup Wheat flour
  • 1/4 Cup Powdered sugar
  • 1/4 Tsp Cardamom powder
  • Cashew Nut 6 nos finely chopped ( I had used badam(almonds) 6 nos finely chopped.
  • 3 Tbsp Ghee
  • 2 Tbsp Milk
Method:
  • Take a wide pan,add ghee to it on medium heat,add cashew nuts as I skipped for almonds. Let it fry till get light golden brown in color.Keep aside.
  • In the same pan with the remaining ghee, add both flours once sifted on medium heat.roast it well and make sure not to get burn on the bottom of the flours. Take care of it and roast well.
  • Once it is roasted well,Transfer into the wide bowl or plate.
  • Add cardamom powder to it and mix well.
  • Add the cashew nut pieces and/or almonds to the mixture and mix well...Pour milk to it.
  • Make sure the mixture is warm to hold the balls with your palm.. Make into balls.
  • Garnish it with a Cashew nut or Almond on the top of the laddoo if you wish for
  • Serve it and Enjoy!!!
  • It must be stored in an air- tight container.

Eggless Kulkuls

Hello Friends!!!


It has been super hectic day today and I made Eggless Kulkuls and It reminds me when my hubby talked abt his visit at Goa!!! We went to Goan restaurant at my place  and very humble lady talked about Goan's cuisines and desserts and many flavors.It is alike to Kerala's Cuisine but tasted very differently. I was being tempted by hearing all her stories and her time during Christmas holidays here. It was best time ever with her at her restaurant. It is the best snack ever during Christmas at Goa!! I love it because the design made me feeling to try for it. I have been wanting to make it and it came out good atleast in my 1st attempt.

Once on Friday I was thinking what to make for my friends!! I want to try something different apart from South Indian snacks...So opted for kulkuls. I made a small batch as it is my 1st attempt so it came out better 
My family and my friends ate it and loved it. It is almost gone within less than 30 mins and asked me how to make/Thanks a lots Priya for  the best snack ever !!! Go visit her blog and you ll see baked goodies for Christmas time or as a snack along with a cup of Tea 

It is sweet version  mixed with flout sugar vanilla extract and make into dough. Make into small sized blueberry balls and press it flat on the back of the fork to get design while folding to get the desired shape.It was fun doing it and once fried ,drain it with tissue paper and coated with powdered sugar.It is almost ready to serve....

Ingredients:


  • .1 1/2 Cup All purpose flour
  • 1/4 Cup butter
  • 1/4 Cup Sugar
  • 1/2 Cup Powdered sugar
  • 1/2 Tsp Baking soda
  • 1/8 Tsp salt
  • 1/4 Cup Water or more to get stiff dough
  • 2-3 Tsp Vanilla extract
  • Oil to deep fry
Method:
  1. Sift the flour,baking soda in a bowl. Add salt to it and keep aside
  2. Melt the butter into the   medium saucepan on medium heat.Once butter is melted,add sugar to it.Let it dissolve and add vanilla extract and let it sit  at room temperature.Pour the butter mixture to the dry mixture bowl and it will be forming crumbs.
  3. Add water one by one while kneading the dough to get into ball formed.
  4. Keep aside for 15 mins.
  5. Make small sized blueberries ball and Take a ball and press it on the back of the fork and flatten it and roll it into a shell.Before reaching the end of the shell add little water to get the shell sealed.
  6. Repeat it for the remaining balls to get the desired shapes.
  7. Take a kadai,Pour the oil to it and heat it on medium high heat.
  8. Place the prepared kulkuls to the hot oil on medium flame...Fry it till it gets golden brown in color
  9. Drain it with tissue paper 
  10. Coat it with powdered sugar in a bowl while the kulkuls are warm enough.
  11. Serve it immediately or put it into the air tight container

Chocolate BlackForest

I have been very busy for the past 2 weeks and I miss my blogging days!!! Well This month has been very busy as got lots of parties and anniversaries to bake it for my friends and my hubby's b'day :) Will post pics shortly :)
 
Herewith I made Chocolate Black forest for my hubby's star birthday as he is very fond of chocolates and of course chocolaty flavor :) Priya is my close pal and I loved all of her baking stuffs in her blog. Ingredients for Cake
  • 2 Cups of All Purpose Flour
  • 2 Cups Granulated sugar
  • 3/4 Cup Cocoa powder
  • 1 1/2 Tsp Baking powder
  • 1 1/2 Tsp Baking Soda
  • 3/4 Tsp salt
  • 1 1/2 cup Milk
  • 1 Tsp Instant Coffee powder
  • 3/4 cup Vegetable oil
  • 2 Eggs
Method:
 
  1. Preheat the oven to 350 F or 180 C Line  the 2 8 Inch Baking pan greased it with oil and dust it with some flour and keep aside
  2. Sift the flour along with cocoa powder, sugar,baking powder and baking soda in a bowl..add salt into t he bowl after sieve.
  3. Add the wet ingredients like eggs, milk, coffee powder and oil to it and mix well
  4. Add the wet mixture to the dry mixture bowl and mix well until it is well incorporated.
  5. Pour into the greased baking pans and tap out once on the counter top
  6. Bake it for about 20 to 25 mins or until the tooth pick comes out clean
  7. Allow it to cool on the cooling rack
Ingredients for Chocolate whipped cream
 
  • 2 Cups Heavy Whipping Cream
  • 3-4 Tbsp Cocoa powder
  • 2 Tsp Vanilla extract
  • 4 Tbsp Icing sugar
Method:
 
  1. Allow the whisk attachment with bowl into the freezer to have it cool for about 30 mins.
  2. After 30 mins pour the cream into the bowl with whisk attachment
  3. Beat it until it is frothy and gets peak form
  4. Add vanilla extract cocoa powder and icing sugar to it
  5. mix well to get peak form and it will b stiff.
 
Assenbly:
 
 
  • Cut the top layers of the sponge cake and make into 4 layers
  • Apply cream on each and every layer till the top cake is covered and all sides
  • Decorate it with whipped cream, chocolate curls and chocolate shavings.
  • Place cherries on the top (optional)
