Eggless Cauldron Cake

Dear Friends

Wishing you and your family Very  Happy New Year!

Herewith I had made Cauldron cakes which is eggless and my most challenging task is chocolate design handle. For this month challenge on baking Egg less group it was so different when I heard the name and have not got any idea about it but it is very cute on seeing it.It goes great on Halloween series. Am thankful to Archana of The mad scientist kitchen who suggested this recipe. It is 1st challenging to me :) Here is the recipe and pic as shown.

I made some changes as I had added Vinegar,whipped cream instead of marshmallow frosting and it tasted awesome :)

Original Recipe Adapted from Pastry Affair.



Ingredients:
 
Devil’s Food Cup Cake:
  • 1/4 cup Cocoa Powder
  •  1 1/4 Cup All Purpose Flour/ Maida
  • 1/2 Cup Water
  • 1/2 Tsp Baking powder
  • 1/2 Tsp Baking soda
  • 1/4 Tsp salt
  • 1/2 Cup Oil
  • 1 Cup Sugar
  • 1 Tablespoon Vinegar
  • 1/4 Cup Sour cream
  • 1 Tsp Vanilla Extract
Whipped Cream Topping:
  • 1/4 cup Heavy whipping cream 
  • 2 Tablespoons Sugar
  • 1/4 Tsp Vanilla extract
Chocolate Glaze
  • 1 cup Semi sweet chocolate chips 

Method:

For making Chocolate Handle
  •  Melt the remaining 1/2 chocolate chips and microwave it for about 1 minute, stir until smooth, and place into a pastry bag. You don't need a special tip for this step; I simply cut off the very end of the pastry bag which was sufficient. On a non-stick mat or wax paper, pipe out the handles 
  • Refrigerate it till it gets firm and able to peel off.
For Making devil cupcakes

Preheat the oven to 350 F or 180 C. Line the muffin papers on the  muffin cupcake pan. and keep aside.
  1. Add all the dry ingredients(flour,baking soda,baking powder,sugar,cocoa powder,salt)  into the bowl and sieve it.
  2. Add all the wet ingredients such as sour cream,vinegar,oil and vanilla extract into the bowl and mix well 
  3. Add wet ingredients as step2 as above to the flour mixture in 3 additions and mix well till it gets incorporated.Do not over mix.
  4. Fill each muffin cup about two-third full with batter and bake it for about 15 to 20 minutes or until the tooth pick comes out clean
  5. Allow it to cool on the cooling rack.
  6.  For Making whipped cream, Add all the ingredients together in to the bowl and whisk it for about 10 minutes to get peak stiff form. keep aside.
  7. Melt out the 1/2 cup semi sweet chocolate chips 
To Assemble:
 I did on my own to  get cauldron cupcake shape.
  • Take 1 cupcake, cut out the excessive on the top  by using pairing knife.
  • Melt the remaining 1/2 chocolate chips and microwave it for about 1 minute, stir until smooth and allow it to cool.
  • Dip the bottom of the cupcake to the melted chocolate bowl and place it on the wax paper and allow it to harden or keep in the fridge to get it quick.
  • Take another 1 cupcake cut the top excessive and apply chocolate glaze over it.and stick it to another cut out chocolate covered cupcake.It will be alike pot. 
  • Put the whipped cream into the piping bag and design it on the top of the cupcake as shown in the pic.
  • If you have any extra chocolate shavings or broken handle garnish it with the bottom of the cupcake .
  • Put the melted chocolate into the piping bag and decorate it on the top of the cupcake around the whipped cream.
  • Put colored sugars( i put yellow one) or edible gold glitters(if you have) on the top of the whipped cream.
  • Peel off the handle gently from the wax paper.
  • Put the firm handle on the top of the cupcake after glued each side on the top which will be able to hold the handle.
  • Serve immediately or keep it in the fridge to avoid handle falling. :)

Fruitcake Cookies

Dear Friends!!!

Here We wish you and your family Merry X Mas :) May your day have filled with fun and happiness!!! Also wishing you and my dearest friends Happy New Year!! :) Herewith I made our Christmas Fruitcake cookies.It was so amazing,tasty,colorful dried fruits and of course It has free alcohol.It is lovely baked and aromatic at home while baking!!! It is so crunchy! It made me happy and smiled by seeing it :) Here is the recipe and go for it!!!
Recipe Adapted from Food Network's Ina Garten.
Ingredients:
  
  • 1/2 cup Raisins
  • 1/4 cup Cashew nuts chopped
  • 1/2 Cup Dried cranberries
  • 1/4 cup dried apricots, coarsely chopped
  • 1 tablespoon honey
  • 2 tablespoons Apple Juice Concentrate
  • 1 Tablespoon freshly squeezed lemon juice
  • 1 Cup Dates chopped.
  • 1/4 cup Tutti fruity(Colorful)
  • 1/4 Tsp Salt.
  • 1 Cup  (2 sticks) unsalted butter, at room temperature
  • 1/4 teaspoon ground cloves 
  • 1/4 Tsp Nutmeg powder
  • 1/2 cup superfine sugar
  • 1/3 cup light brown sugar, firmly packed
  • 1 extra-large egg
  • 2 2/3 cups all-purpose flour 
Chop the dates. In a medium bowl, combine the dates, raisins,cranberries , apricots, honey, apple juice, lemon juice, cashew nut, tutti fruity and a pinch of salt. Cover with plastic wrap and allow to sit overnight at room temperature.

Method:
1.Using electric mixer or hand mixer, cream the butter, white sugar, and brown sugar on medium speed until smooth.
2.With the mixer on low speed, add the egg and mix until incorporated. 
3.With the mixer on low speed, slowly add the flour and 1/4 teaspoon salt . 
4.Mix well until it is well incorporated.Don't over mix! 
5. Add the fruits and nuts covered with remaining flour taken from 1/3 cup flour

6.Put the dough mixture on the long edge of a 12 by 18-inch piece of parchment or waxed paper. Roll into a log, 1 1/2 inch thick on the baking sheet. Refrigerate the dough for few hours, or until firm.
Preheat the oven to 350 degrees. 
7.Take out the refrigerated dough and place it on the chopping board.
8.Allow it to stand before cutting it.
9.Remove the wax paper and allow it to cut the logs into 1/2-inch-thick slices with a small sharp knife.
10. Place the slices 1/2-inch apart on ungreased baking sheet and bake for 15 to 20 minutes, until lightly golden. 
11.It is being served warm or cooled.

Christmas Fruit Cake

Dear Friends!!!

Here We wish you and your family Merry X Mas :) May your day have filled with fun and happiness!!! Also wishing you and my dearest friends Happy New Year!! :) Herewith I made our favorite Christmas Cake.It was so amazing,tasty,colorful dried fruits and of course It has rum (Spiced flavor). You can opt for Apple juice or orange juice instead of Rum :) :) It is lovely baked and aromatic at home while baking!!! It is so soft and moist while touched the cake after baked fresh from the oven today!! It made me happy and smiled by seeing it :) Here is the recipe and go for it!!!



Ingredients: 

For Soaking!
  • 1 Cup Raisins(Black currants)
  • 1 Cup, Dates  chopped
  • 1/4 Cup, sliced thin Candied Orange/Lemon Peel
  • 1 Cup Unsalted Cashew Pieces chopped
  • 1/2 Cup Pistachios chopped
  • 1/4 Cup Tutti fruity(Colorful)
  • 1/4 Cup Rum or Apple juice concentrate
Method:

  • In a medium saucepan, Add rum or apple juice to it and add all the ingredients under Soaking list.
  •  Allow it to boil on medium heat and transfer it to the bowl.
  • Let it sit for about 10 to 12 hours or overnight at room temperature.More soaking will give you better taste.
 For Caramelized Syrup
  • 6 Tbsp White Sugar
  • 3 Tbsp Water
  • Few drops of Fresh Lemon Juice
  • 1/2 Cup Boiling water
For Cake Preparation: 
  •  2 sticks (8 oz) at room temperature 
  •  2 1/2 cups Powdered Sugar
  • Eggs – 3 large or 4 medium (separated)
  • 1 Tsp Vanilla Extract
  • 2 Cups All purpose flour 
  • 1Tsp Baking powder 
  • 1/2 Tsp Cinnamon Powder
  • 1/4 Tsp Nutmeg Powder
  • 1/4 Tsp Clove Powder
  • 1/4 Tsp Ginger powder

Method:Step by Step wise presentation picture as given.


Once you started beating Egg whites, Preheat oven to 350 degrees Fahrenheit or 180 C.
 Lightly coat baking pans with spray cooking oil or regular oil or apply butter,dust it with flour to remove any excess. or line it with parchment paper.Keep aside.

1. In a small saucepan, add 6 Tbsp Sugar and 3 Tbsp water and few drops of lemon juice.Allow it to boil on medium heat. Swirl pan to mix – do not use spoon.
1.a After few minutes,the color is changing.
1.b. Heat until sugar changes color and becomes caramelized. (approx 10 minutes).
1.c. Add 1/2 cup boiling water and swirl pan again to mix well. Keep aside.
2. In a large mixing bowl, Beat softened butter and powdered sugar by using hand blender
3. Mix well until it is creamy.Scrap all the sides .
4. Add one egg yolk at a time one by one and mix well. 
5. Add Vanilla Extract and mix well until it is well incorporated.
 6. Combine all dry spices, baking powder to the flour before sieve.
7. Sift the flour and all spices powder
8.Whisk the flour and spices powder
9.Put the sifted flour spices powder into the butter egg mixture in 3 additions..
10. Add cooled caramelized sugar syrup a little at a time into the butter flour mixture and mix well.
11. Add soaked fruit/nut mixture into the flour mixture.
12.Mix well until it is well incorporated.
13. In a separate bowl, beat egg whites until it is fluffy and soft peaks form.
14. Fold beaten egg whites into the cake batter.Do not over mix.
15. Pour batter into greased baking pan 9 inch or bundt pan and bake for approx 1 hour at 350 F degrees F. For smaller pans, baking time may vary.
16. Remove cake from oven and allow it to cool for few minutes

Choco Chip Cookies

Dear Friends!

It is one of kid's most favorite top cookie as Choco Chip Cookies.It is great for any occasion :) My kid asked me to bake these Choco chip cookies because her classmate said store bought sandwich cookies were not nice. After her school, my kid asked me "Mom Can you bake Choco chip cookies? As her friends will love it because it has choco chips :) Also she added by saying me Keep Choco chip cookies along with a glass of milk for Santa.Santa will be happy to have it before X mas arrives. My kid had helped me in baking and we had fun :) Ho Ho :) Here is the recipe and I got it from Hershey's recipe Semi sweet chocolate chips packet.:) 


I had used cut out cookie cutter such as Stockings,X mas tree,Candy,Snowman and Gingerbread boy as shown in the picture as above.:)

Ingredients:

  • 1 cup Unsalted Butter(Softened)
  • 3/4 Cup Granulated sugar
  • 3/4 Cup Light Brown Sugar
  • 1 Teaspoon Vanilla Extract
  • 2 Eggs
  • 2 1/4 cup All purpose flour
  • 1 Teaspoon Baking soda
  • 1/2 Teaspoon Salt.
  • 2 Cups Semi sweet chocolate chip morsels
  • 1 Cup nuts(Chopped)
Preparation:

Here is the step by step wise as follows.



  • Preheat the oven to 350 F or 180 C.
  1. Add the flour,Baking soda and salt.Sieve it once.
  2. Whisk all the dry ingredients as step 1 follows. Keep aside.
  3. Add Butter,granulated sugar,brown sugar and beat it until it is creamy by using hand mixer or electric mixer.
  4. Scrap all the sides by using spatula.
  5. Add eggs one by one at a time. Beat well until it is well incorporated.
  6. Add Vanilla extract to it.
  7. Add Flour mixture by 3 additions to get well covered /blended
  8. Scrap all the sides by using spatula and it is well incorporated.
  9. Add choco chips and fold it by using spatula.If you want to add nuts you can add along with choco chips.
  10. Talk half of the cookie dough and other dough keep aside. Take 1st half of the cookie dough,Dust the flour on the working surface and roll the cookie dough.Take cut out X mas cutter and place on the cookie dough to get the desired shapes. Transfer the shaped cookie on the Baking sheet.
  11. Take out the remaining cookie dough,Take a tablespoon of cookie dough and place on another baking sheet.Bake it for about 8 to 10 minutes or until brown one.Allow it to cool on the cooling rack.
  12. Choco chips cookies is served as per your decorations as you like It goes great with a glass of milk or eat as it is :).
Notes:If you want to add nuts you can add along with choco chips to it.I didn't add as nuts is an allergy for her friends.so didn't add it too.
Serving Option
  • Serves about 5 dozen cookies :)

Banana Nutella Crepe

Dear Friends!

On lazy weekends,got bored with those plain corn flakes at mornings! I used to make pancakes from pancake mix and made it.My hubby and my kid loves pancakes at most of the times.I am also thinking why can't I make the homemade pancake! It is different from normal pancake! I got an idea of making crepe which is very light and thin pancake and garnish with fruits or any topping such as nutella,chocolate sauce or whipped cream or fresh fruits of your choice.It is great idea and go for it :)

Introduction:

A crepe is purely originated from France.It is the main ingredient as wheat flour and use any filling on the cooked crepe.It is made out from flour,eggs and milk.It can be eaten as part of breakfast or dessert if it is sweet type. If savory type,then its the lunch such as fillings of cheese or mushroom or various meat on the cooked crepe being served. You can opt for crepe type such as sweet or savory! I made sweet type of crepe as Banana Nutella Crepe.:)  Go for it.



Ingredients:

  • 1/2  cup all-purpose flour or Wheat flour
  • 1 tablespoons sugar
  • A pinch of salt.
  • 1/2 Tsp vanilla extract
  • 1 tablespoon butter, melted
  • 1 egg
  • 1 /4  to 1/2 cup milk 
  • Nutella Spread about 1/4 cup.
  • 1 to 2 bananas, sliced
GARNISH:

  • Whipped cream or maple syrup or Nutella or Chocolate sauce or Powdered sugar or fruits.

Preparation :

Here is the step by step wise picture as given


  • Sieve the flour  and add salt,sugar. Whisk well.
  • Add egg,melted butter and vanilla extract to the flour mixture. Mix well 
  • Add milk at a time to get thin consistency batter.Keep aside.
  • Slice the bananas thinly.
  • Take a frying pan or griddle ,put the butter to it, Add batter and make a thin on it.
  • Flip it and turn it till light brown one.
  • Put it on the serving plate. Spread nutella on the one side of the cooked crepe as shown.
  • Place the sliced bananas on the nutella spread crepe
  • Fold it as shown in the picture.
  • Garnish it with chocolate sauce or maple syrup or whipped cream or powdered sugar on it and fruits.
Serving Options:

Serves 2 to 3.

Notes: You can use wheat flour instead of  All purpose flour. Add water if you don't want to add milk to make thin batter.

Neapolitan Christmas Cake

Here is the Baking Partners Challenge #5 by an amazing creative Swathi on selecting 3 recipes for this month and I was selected as Neapolitan Cake as it is great for Christmas day as enjoying colorful spongy cake softened with whipped cream over it.It tastes so good!!! It is great idea to bake it on before X mas arrives :) Am thankful to Suja for giving this recipe and selected by Swathi on Baking partners group :) It was fun :)




I have made the same ingredients as no changes are made and did changed for filling by replacing gelatin for corn flour..

Ingredients:

For Sponge Cake :

  • 1 cup cake flour(not self rising)
  • 1/3 cup ground almonds
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 8 egg whites
  • 1/4 tsp cream of tartar
  • 3/4 cup granulated sugar
  • 1/4 tsp almond extract
  • Green and red food coloring
 For Filling and Topping
  • 1 Tsp unflavored Gelatin.( You can replace by adding 1 Tsp of corn flour)
  • 3 Tablespoons Confectioners sugar
  • 1 3/4 Cup Heavy whipping cream
  •  1/4 cup Strawberry jam or your choice of jam.
  • 1/2 to 1 cup Sweetened dessicated coconut flakes

Method

Here is the step by step wise of  Neapolitan Cake :

 
Pre heat oven to 350 degree F. Coat three loaf 9 1/4x 5 ¼ inch loaf pan with non stick cooking spray and line with wax paper
  1. Whisk all the dry ingredients as given.
  2. Separate egg whites from egg yolks and keep aside.
  3. Take a big bowl, Add egg whites,sugar ,1/4 tsp of tartar 
  4. Beat until it gets peak form.
  5. Divide the batter into 3 cups one is added by green food coloring and other is read and remaining white batter.
  6. Transfer each batter into the greased 9 inch loaf pan and bake it for about 10 to 12 minutes.(Notes : If having only one then go one by one adding one batter at a time.once baked then allow the pan to cool.then pour the 2nd batter and so on.)
  7. You ll get 3 baked colored sponge cake.Allow it to cool on the cooling rack.
  8. For making whipping cream,I added Cornflour to the heavy cream and sugar and beat until peak forms.
  9. Each layer of sponge cake,spread strawberry jam or your choice of jam
  10. Apply whipped cream on the covered jam of each layer.
  11. Put the next cake on the top of the cake.
  12. Spread the jam over it.
  13. Spread the whipped cream over it
  14. .Finally add the last cake on the top of the 2 cakes. Spread the whipping cream over it and all the sides.
  15. Decorate it as you like.On the top garnish it with sweetened coconut flake .
  16. Neapolitan cake is ready with fresh whipped cream and my homemade decorated chocolate hearts and written s MERRY X MAS :)
Notes:

If you are using gelatin instead of corn flour to keep stabilized the whipped cream then go for it as below 

Sprinkle gelatin over ¼ cup of cream and let it stand for one minute to soften. Stir over low heat until gelatin is dissolved. Remove from heat.
With a mixer on medium speed beat the remaining 1 1/2 cup cream and confectioners sugar till it thickens and is frothy. Add gelatin mixture. Beat until stiff peaks form

Eggless Mini Molten Chocolate Lava Cake

Dear Friends

Am very much sorry for the late as I was busy in preparing cakes for my daughter's birthday and my friend's birthday and anniversary cake. November month was very tight..Am sorry :( Here I had made an Eggless Molten Lava cake in which Gayathri of Baking Eggless group had given for Nov month challenge. It was tricky to me since it had no eggs and It is so easy and need to correct the exact measurements.:)

I had been enjoying this group since its pure egg less..Its is challenging for me to do!!! Here I made as I had reduced to half because my hubby and my kid are full because they ate more cakes and cakes on Nov month for my birthday,my friend's birthday and anniversary and my kid's b'day..It was full mood on Nov :)


Here is the ingredients in which i had tried on being reduced to half..

 Prep Time- 5 minutes
Bake Time 10 to 15 minutes or it varies.
Serves - 1  

Ingredients:
  • 1 Tbsp All purpose Flour
  • 1Tbsp Powdered Sugar
  • A Pinch of Baking Powder
  • 1/2 Tsp Cocoa powder
  • 1 small piece of Baking semi sweet chocolate.
  • 1/4 Cup Milk
  • 2 Tsp Oil or melted butter(I used Oil)
Method:



Preheat the oven to 350 F /180 C
  • Mix all the dry ingredients using sieve.
  • Add milk,oil to it 
  • Mix well.
  • Grease ramekins or oven proof bowl with oil or butter.
  • Pour half of the batter to it.
  • Put small piece of chocolate to the greased ramekin or oven proof bowl containing batter
  • Pour the remaining batter and allow the chocolate to cover it.
  • Bake it for about 8 to 10 minutes.
  • Remove it from the oven and allow it to warm.
  • Take a flat spatula and run around he edges and invert it on the serving plate carefully.
  • Dust it with powdered sugar or fresh strawberries or a dollop of an ice cream.
  • Serve warm and it tastes amazing when you slice it as the chocolate is flowing .
  • Enjoy :)

You can follow the ingredients as usual as below 
Ingredients

  • 1/4 cup curd
  • 1/4 Cup Cocoa powder or Semi Sweet Chocolate bars
  • 1/2 Tsp Baking powder
  • 1/3 Cup Powdered Sugar
  • Baking Chocolate or Cooking Chocolate at least 4 to 6 
Method:

Preheat the oven to 350 F /180 C
  • Mix all the dry ingredients using sieve.
  • Add butter and chocolate into the bowl and place over the double boiler sauce pan.
  • Mix well
  • Whisk it by adding sugar and curd to it.
  • Add the dry ingredients to the sugar curd mixture
  • Mix well until it is well incorporated..
  • Grease ramekins or oven proof bowl with oil or butter.
  • Pour half of the batter to it.
  • Put small piece of chocolate to the greased ramekin or oven proof bowl containing batter
  • Pour the remaining batter and allow the chocolate to cover it.
  • Bake it for about 8 to 10 minutes.
  • Remove it from the oven and allow it to warm.
  • Take a flat spatula and run around he edges and invert it on the serving plate carefully.
  • Dust it with powdered sugar or fresh strawberries or a dollop of an ice cream.
  • Serve warm and it tastes amazing when you slice it as the chocolate is flowing .
